Cacao-Berry-Seed Yogurt Bark

I admit, I am not a morning person… to say the least. More like I don’t like life until after noon!  And eating a healthy breakfast (or breakfast at all) when still groggy and also trying to avoid common allergens like dairy, gluten, nuts and eggs can be REALLY tough!  These creative (and pretty!) superfood snack bars are perfect for a grab-and-go breakfast or snack! The coconut yoghurt of course adds some gut healthy probiotics, which are severely lacking in most American’s diets these days.  The berries add nutrients and important antioxidants, while the chia and pumkin seeds add healthy fats and proteins.  I also added some organic cacao nibs not only for taste but a good source of iron and magnesium!

Ingredients:

2-8 oz containers of unsweetened coconut yogurt (I like GT’s Cocoyo)

1/3 c organic unsweetened shredded coconut flakes

3 Tbsp organic honey

2 Tbsp organic chia seeds

1/3 c organic roasted pumpkin seeds (I used Eden brand)

1/4 c each of Karen’s Natural’s organic blueberries and raspberries, plus a little extra to sprinkle on top.

1 Tbsp organic cacao nibs to sprinkle on top

Directions:

Combine the yogurt and honey in a small bowl and stir together until well blended. Add the coconut flakes, chia and pumpkin seeds, and mix together. Add the fruit last and stir in. Spread mixture in a pie dish or small square glass baking dish.  Add the cacao nibs and extra fruit to the top and press in a little (this is more to make the bark aesthetically pleasing than anything… I mean I’m definitely more likely to eat something that’s pretty, aren’t you?). Cover and freeze overnight. Cut into bars and enjoy for a healthy grab and go breakfast or snack throughout the week! Note the bars need to remain in freezer to keep solid until ready to eat 🙂
